Honey Thyme Haloumi with Caramelised Figs

Ingredients:

2 tbsp honey

2 tbsp lemon juice

4 sprigs thyme leaves, plus extra for garnish

450g pack Cyprus style haloumi, sliced thickly

3 figs, halved

Extra virgin olive oil, to brush

Method:

Whisk together honey, lemon and thyme in a small bowl and set aside.

Brush the haloumi and figs with olive oil. Heat a chargrill pan over medium-high heat. Grill haloumi for a few minutes each side until golden, drizzling a little dressing over the cheese for the last 30 seconds in the pan. Transfer haloumi to a serving plate.

Place figs in the hot pan cut side down and grill for one minute on each side to caramelise. Scatter figs over haloumi and drizzle with dressing. Garnish with extra thyme and serve immediately.
